An excellent starter that the original also suggests as a first course: full of flavour and easy to make, oven-baked with a crisp coating. Serve with a simple little salad and you are done. Frozen prawns can be used.

Method
The preparation remains in its original order; guided mode is not available for this structure.
I shell the prawns and remove the intestinal vein with a cocktail stick.

With a vegetable peeler or mandoline, I cut courgettes into strips. Choose fairly large, straight courgettes. You can grill them for a couple of minutes to make them easier to roll.

I lightly salt each slice and wrap around a prawn.

I prepare them all.

I thread them onto wooden skewers.

I generously brush the skewers with extra virgin olive oil and add salt and pepper.

I coat the skewers in breadcrumbs, pressing gently. You can flavour the breadcrumbs with parsley and garlic or other herbs.

I arrange on a tray lined with oiled baking paper and add oil all over the surface.

I bake at 180°C for 15 minutes and serve with a lemon wedge.
