  1. Step 1 of 13

I soak sultanas in water and melt 30 g butter with breadcrumbs in a small pan.

  2. Step 2 of 13

I toast until golden and reserve.

  3. Step 3 of 13

    I toast pine nuts separately.

  4. Step 4 of 13

I peel and thinly slice apples with lemon juice to prevent browning and add washed organic lemon zest.

  5. Step 5 of 13

I add squeezed sultanas, walnuts and pine nuts.

  6. Step 6 of 13

I add brown sugar and a teaspoon or more cinnamon to taste.

  7. Step 7 of 13

I mix, unroll pastry and brush with remaining melted butter.

  8. Step 8 of 13

I scatter toasted crumbs, leaving borders.

  9. Step 9 of 13

    I spread filling.

  10. Step 10 of 13

I roll using paper and seal ends, with seam on top.

  11. Step 11 of 13

I carefully turn seam underneath, brush milk and slit pastry to release steam.

  12. Step 12 of 13

I scatter pearl sugar. Brush yolk beaten with milk instead if liked; I prefer milk.

  13. Step 13 of 13

I bake at 180°C for about 30/35 minutes until puffed and golden, then dust icing sugar.
