INGREDIENTS FOR 2 PEOPLE
TAGLIOLINI
200 g 'OO' flour
2 eggs
SAUCE
250 ml cooking cream
20 g butter
1 generous tablespoon truffle cream, available in good-quality jars
Salt, pepper
Parsley
I make a well in the flour on a board, crack in the eggs, mix with a fork and knead vigorously by hand.
Once smooth and elastic, I wrap in cling film and rest for half an hour.
Then I proceed as for tagliatelle (see Fresh Pasta on the blog), using the appropriate cutter for tagliolini.
If short of time, buy good-quality fresh tagliolini; this quick sauce suits many pasta shapes.

I put the cream, butter and truffle cream in a large frying pan.

I melt gently, adding a couple of tablespoons pasta cooking water and a little salt.

I cook the tagliolini in salted water; they cook very quickly and are ready when they float.

I drain, leaving fairly moist, and add to the sauce.

I mix, add ground pepper and chopped parsley.

I serve with grated Parmigiano.
