I thinly slice beef.
Then dice.
I chop with a knife, fine but not too fine.
I chop desalted capers.
I mix meat, capers, salt, pepper and extra virgin olive oil in a bowl.
I add grated lemon zest, cover and refrigerate to absorb flavour.
I mix goat's cheese with salt, pepper, extra virgin olive oil and grated lemon zest.
I mix well and refrigerate.
I make caramelised onions.
I thinly slice onion with a mandoline, add oil and 2 tablespoons brown sugar and heat.
I add salt and pepper and soften.
I add vinegar and finish cooking.
Onions should caramelise and dry. I cool.
Everything is ready to assemble.
I divide meat between two portions, pressing into a serving ring on the plate.
I divide goat's cheese too.
I add caramelised onions.
I carefully remove the ring and finish with oil.Original source: https://incucinaconlilly.com/2019/11/01/tartar-di-manzo-con-caprino-e-cipolle-caramellate/
