A delicious, fresh and light starter. The original advises buying blast-frozen tuna to avoid bacterial loads. Otherwise easy, requiring just patience to cut the ingredients evenly. It will look impressive.

- Step 1 of 11
I finely dice tuna and add a few drops of lemon juice.

- Step 2 of 11
I peel cucumber and scoop out seeds with a teaspoon.

- Step 3 of 11
I finely dice and drain, keeping all ingredient pieces the same size.

- Step 4 of 11
I dice onion and soak in cold water with a little vinegar to soften its strong flavour.

- Step 5 of 11
I dice feta.

- Step 6 of 11
I chop olives.

- Step 7 of 11
I chop tomatoes and drain in a sieve.

- Step 8 of 11
I put 3 tablespoons of extra virgin olive oil, a tablespoon of vinegar, salt and pepper in a jar and shake vigorously to emulsify. Everything is ready to assemble.

- Step 9 of 11
I mix everything with drained, dried onion, oregano and dressing. I divided between 2 bowls for equal quantities, but one bowl is fine. Mix gently without breaking feta.

- Step 10 of 11
I divide between 2 oiled rings and press lightly.

- Step 11 of 11
I remove rings, decorate with lemon slices and rosemary flowers, add oregano and more dressing. Enjoy.
