  1. Step 1 of 11

The eggs must be at room temperature. I separate the yolks from the whites and put the yolks and 100 g sugar in the bowl of a stand mixer, or in a bowl, and start whisking.
  2. Step 2 of 11

In another bowl, I start whisking the egg whites. When they begin to foam, I add the remaining 25 g sugar. They must be very stiff.
  3. Step 3 of 11
I add the mascarpone to the thoroughly whisked yolks.
  4. Step 4 of 11
I add a dash of rum and whisk to incorporate it.
  5. Step 5 of 11
I add two spoonfuls of the whisked egg whites to the mascarpone cream and mix them in without worrying about being gentle.
  6. Step 6 of 11

I then add the rest, gently folding upwards from the bottom, to make a soft, smooth cream.
  7. Step 7 of 11
I put a little cream on the bottom of the dish. After quickly dipping the savoiardi in the coffee, I arrange the first layer.
  8. Step 8 of 11
I spread over half the cream.
  9. Step 9 of 11
I add another layer of dipped savoiardi.
  10. Step 10 of 11
I cover with the remaining cream, cover with cling film or foil and refrigerate for several hours. I often make it the day before.
  11. Step 11 of 11
Just before serving, I dust with unsweetened cocoa powder. Do not do this earlier, or the cocoa will become wet. You can also make individual portions.
