Thousands of apple cakes exist, tall, shallow or tarts. I have many on the blog as almost everyone likes them, and this deserves a place too!

Method

The preparation remains in its original order; guided mode is not available for this structure.

I combine eggs, sugar and vanilla in a mixer or bowl for electric beaters.
I whisk at least 10 minutes.
I peel and coarsely grate an apple, coating with some lemon juice.
I peel and thinly slice other apples with remaining juice.
I gradually whisk combined water and oil into thick eggs.
I sift flour and baking powder and add gradually.
I fold in grated apple with grated lemon zest.
I mix, butter and flour a ring tin and add batter.
I arrange apple slices closely in batter.
I add zest of the other lemon and brown sugar on top.
I added optional pearl sugar too.
I bake at 180°C for about 50 minutes, testing with a skewer.
I cool slightly before unmoulding.
