  1. Step 1 of 12
I used ready-made pastry for speed, or make the blog recipe. I put it with parchment in a tin, leave a rim a couple of cm high and prick.
  2. Step 2 of 12
I cover base with parchment, add dried beans, salt or rice and bake for 10 minutes at 180/200°C.
  3. Step 3 of 12
Meanwhile, I slice and wash leek and stew gently in oil about ten minutes, adding water if needed and salt, then cool slightly.
  4. Step 4 of 12
I remove paper and beans and spread leeks evenly.
  5. Step 5 of 12
I combine cream and cheese in a jug.
  6. Step 6 of 12
    I add egg.
  7. Step 7 of 12
Salt and pepper, and whisk until even.
  8. Step 8 of 12
    I add orange zest.
  9. Step 9 of 12
    I pour over leeks.
  10. Step 10 of 12
I bake 20 minutes and remove.
  11. Step 11 of 12
    I add salmon strips.
  12. Step 12 of 12
I bake another 10 minutes, then decorate with leek strips if liked.
