Ever had leftover chicken and potatoes after lunch?
Not very tempting! Here is how I transformed them.

IMG_1120.JPG FOR 1 STACK

1 chicken drumstick

3 potatoes

Pink peppercorns

Extra virgin olive oil

I skin and bone the chicken and cut into small pieces.

I mash the potatoes directly in the tray to collect the remaining juices.

I place a food ring on parchment on a baking tray; it can also be reheated in the microwave. I add half the mashed potatoes, levelling and pressing.
IMG_1123.JPG
I add half the chicken pieces.
IMG_1124.JPG
I cover with the remaining potatoes, pressing lightly.

I finish with the remaining chicken, pink peppercorns and a drizzle of extra virgin olive oil.

I bake at 180°C for 10 minutes or microwave for a couple of minutes.
I garnish with sage and add two leftover baby peppers to the plate.
