Ingredients and method

The preparation remains in its original order; guided mode is not available for this structure.

Salmon trout fillets prepared like Milanese cutlets, delicious and a way to encourage children to eat fish.
INGREDIENTS FOR 2 PEOPLE
2 salmon trout fillets
2 eggs
Breadcrumbs
Extra virgin olive oil
Butter
Salt
Lemon
I allow 1 fillet per person for a generous portion.
I run a finger towards the tail over the thicker part to find small bones.
I remove all with tweezers.
At the tail, I insert a blade between skin and flesh, holding skin with paper.
I slide blade and gently pull skin, or ask the fishmonger.
I lightly salt and fork-beat eggs on a plate.
I thoroughly coat fillets in egg.
I put plenty of breadcrumbs on another plate.
I press fillets into coating.
For double coating, dip again in leftover egg and breadcrumbs.
I heat plenty of butter and extra virgin olive oil in a large pan.
I brown fillets on one side.
Then the other.
I drain on kitchen paper, lightly salt and serve hot with salad, tomatoes, potatoes or any side.
