Ingredients and method

The preparation remains in its original order; guided mode is not available for this structure.

A quick, light but very flavourful recipe.

INGREDIENTS FOR 2 PEOPLE

2 TROUT FILLETS

4 TABLESPOONS OF GRATED PARMESAN

4 TABLESPOONS OF BREADCRUMBS

2 TABLESPOONS OF CHOPPED PARSLEY

CHIVES

1 LEMON

1 GARLIC CLOVE

EXTRA VIRGIN OLIVE OIL

SALT

PEPPER

2 POTATOES

I mix cheese, breadcrumbs, chopped parsley and chives, salt, pepper and grated lemon zest in a bowl, then add oil.

I grate in a garlic clove and mix to a moist coating.

I remove all pin bones with tweezers.

I remove the skin with a sharp knife.

I peel two potatoes, thinly slice with a mandoline and put in cold water. I dry and arrange overlapping on a tray lined with baking paper, add a little salt and oil and place the trout on top.

I cover with the herb breadcrumb mixture, pressing lightly so it adheres.

I drizzle with oil and bake in a preheated oven at 180°C for about 20 minutes until the coating is golden.
