Ingredients and method
The preparation remains in its original order; guided mode is not available for this structure.
Ingredients
1 pumpkin
1 glass vinegar
1 glass water
1 small piece chilli
2 garlic cloves
Salt
Extra virgin olive oil
Parsley
I choose a good pumpkin.

I prepare the marinade ingredients.

I remove the pumpkin seeds and skin.

I cut slices half a centimetre thick.

I heat a grill and grill them.

I boil the water, vinegar, chilli, salt and a few tablespoons of oil in a small saucepan, then cool slightly.

I place some pumpkin slices in a container and cover with marinade and a little parsley.

I continue in layers and finish with a splash of oil.

I cover and marinate, moving the container occasionally.
Best made the day before to absorb the flavours.
In southern Italy, courgettes and aubergines are also made ‘in scapece’. Mine is a lighter version: the original requires frying the vegetables.
