A tasty, simple starter or side. My capers are home-grown: around Gargnano, Lake Garda, thorny plants with beautiful flowers grow from walls. I patiently harvest in July and keep under salt in glass jars. These courgettes accompany fish carpaccio or meat beautifully.

20140724-170907-61747090.jpgI wash, trim and halve courgettes, remove the 4 outer sides and discard less flavourful centres.
20140724-171110-61870218.jpgI cut each section into batons.

I boil about 1 litre and a half water with coarse salt.
20140724-171307-61987392.jpgI add 1 glass white vinegar.
20140724-171348-62028984.jpgAll courgettes are sliced.
20140724-171431-62071287.jpgI boil them about 3 minutes.
20140724-171600-62160494.jpgTaste: keep crisp.
20140724-171701-62221253.jpgI drain into a bowl, prepare parsley, a sliced garlic clove and 2 chillies.
20140724-171857-62337705.jpgI add whole or chopped capers, parsley, garlic and chillies.
20140724-172133-62493584.jpgI add Garda olive oil from my trees. Excellent with fish, meat, cured meats and cheeses.
20140724-173009-63009473.jpgEven better next day and keeps refrigerated a few days.
