Ingredients and method

The preparation remains in its original order; guided mode is not available for this structure.

INGREDIENTS
Base
180 g plain biscuits
100 g butter
Filling
500 g Philadelphia
120 g icing sugar
10 g gelatine
250 g fresh whipping cream
1 tin of 10 pineapple slices in natural juice
Mixed berries as preferred
Topping
1 sachet Tortagel or 2 tablespoons cornflour
3 tablespoons sugar
250 pineapple juice
I soak gelatine in cold water 10 minutes.
20140607-173949-63589548.jpg
I finely crush biscuits.
20140607-174130-63690909.jpg
I collect in a bowl.
20140607-174217-63737727.jpg
I melt butter.
20140607-174256-63776503.jpg
I combine with biscuits.
20140607-174339-63819069.jpg
I line base and sides of a 22 cm tin with parchment.
20140607-174501-63901591.jpg
I firmly press biscuits into an even layer, using a meat mallet.
20140607-174621-63981246.jpg
I refrigerate the uniform base.
20140607-174718-64038142.jpg
I open half a vanilla pod and scrape seeds.
20140607-174849-64129043.jpg
I combine cream cheese, 50 g of the icing sugar and vanilla seeds.
20140607-175106-64266954.jpg
I whisk to a soft cream.
20140607-175209-64329144.jpg
I dissolve squeezed gelatine with two or three tablespoons cream in a microwave bowl or saucepan without boiling.
20140607-234543-85543721.jpg
I whip cream separately, gradually adding remaining 70 g icing sugar.
20140607-234726-85646286.jpg
Continuing to whisk, I gradually add lukewarm gelatine. This is the difficult stage: hot gelatine touching cold cream forms lumps.
20140607-235304-85984094.jpg
Cream should be whipped but soft.
20140607-235514-86114452.jpg
I vigorously mix two or three tablespoons cream into cheese.
20140607-235634-86194438.jpg
I gently fold in remaining cream upwards from bottom.
20140607-235845-86325001.jpg
I drain and thoroughly dry pineapple slices, retaining juice.
20140608-000043-43337.jpg
I finely chop 5 slices.
20140608-000125-85413.jpg
I gently add to cream.
20140608-000222-142738.jpg
I add filling to chilled base.
20140608-000400-240704.jpg
I level and refrigerate.
20140608-000437-277418.jpg
Make topping with Tortagel from the supermarket baking aisle and pineapple juice totalling 250 g, topping up with water if needed, plus the sachet and 3 level tablespoons sugar. Alternatively, add 2 tablespoons cornflour dissolved in cold water to juice and sugar and boil until thick.
20140608-000659-419535.jpg
I stir and boil juice for 1 minute, remove and cool 2 minutes, stirring.
20140608-000925-565472.jpg
I add topping, reserving two or three tablespoons.
20140608-001153-713353.jpg
I arrange remaining 5 pineapple slices and chosen berries, brushing reserved topping over fruit for shine.
20140608-001401-841003.jpg
I refrigerate several hours and decorate with mint.
