Ingredients for 4 people
800 honey mushrooms
6 tablespoons extra virgin olive oil
2 garlic cloves
Plenty of chopped parsley
Salt and pepper

Clean the mushrooms by scraping off the soil. If large, cut them in half. Rinse quickly under cold water, then put in a tea towel and dry thoroughly by gently patting.

Heat the oil in a wide pan and gently fry the garlic cloves, which we will remove later.

Add the mushrooms, stir, cover and cook for about 15 minutes until some of the liquid has evaporated. Do not dry them out too much; leave a little sauce. Stir and cook for another 10 minutes.

Add salt, pepper and plenty of parsley. Taste to check they are cooked; otherwise, cover and continue cooking for a few minutes.

I made fairly soft polenta and put it in the centre of the plate with a hollow in the middle.
I sprinkled it with grana, arranged the mushrooms in it and finished with a drizzle of extra virgin olive oil.
