Ingredients and method

The preparation remains in its original order; guided mode is not available for this structure.

INGREDIENTS
370 g flour
200 g sugar
200 g very soft butter
1 whole egg + 1 yolk
250 g dark chocolate chips
5 g baking powder
2 g bicarbonate of soda
Zest of 1 organic orange (I used mandarin)
I whisk butter and sugar in the mixer.
Once even, I add whole egg and yolk.
Meanwhile, I sift flour and baking powder.
I add bicarbonate of soda.
Grated orange or mandarin zest.
I mix in half the flour, then the other half.
I add chocolate chips and mix.
Once the chocolate chips are incorporated, I remove the dough from the bowl and put on a lightly floured work surface.
I divide into three and roll cylinders three cm in diameter on parchment on a tray, refrigerating at least 3 hours until firm.
I cut pieces about 1 cm / 1.5 cm thick with a sharp knife.
I space on a parchment-lined tray.
I bake at 160/170°C for about 15 minutes, remove and cool before storing in tins or food bags.
