Ingredients and method
The preparation remains in its original order; guided mode is not available for this structure.
A light dish with intense flavour and aroma. I used ready-spiced couscous; otherwise add your favourite spices, such as turmeric, curry or paprika. Omit prawns for a vegetarian version.INGREDIENTS FOR 4
250 G PRECOOKED SPICED COUSCOUS
300 ML WATER
2 COURGETTES
HALF A YELLOW PEPPER
HALF A RED PEPPER
1 AUBERGINE
1 LARGE CARROT
HALF AN ONION
10 CHERRY TOMATOES
OREGANO
EXTRA VIRGIN OLIVE OIL
SALT
I put the couscous in a large bowl.
I add boiling water.
I cover with cling film and rest for 10 minutes.
I prepare the vegetables. I used previously grilled courgettes, aubergines and peppers from another recipe, finely diced. Quantities are indicative; vary them or add other vegetables to taste.
I finely dice carrot, tomatoes and onion.
I cook onion and carrots in a little oil, keeping them crisp.
I set aside, quickly sauté the tomatoes in the same pan and set aside too.
I quickly sauté the prawn tails in a little oil in a large pan that will hold the couscous, and salt lightly.
I add all the vegetables, adjust salt and add oregano.
I fluff the rehydrated couscous with a fork.
I mix it into the vegetables, add a drizzle of oil and a couple of tablespoons of water if needed, heat and serve hot.
