Ingredients and method

The preparation remains in its original order; guided mode is not available for this structure.

A simple, delicious dish using Lake Garda perch fillets, which I am lucky to have freshly caught.
INGREDIENTS FOR 2 PEOPLE
8 skinless perch fillets
2 eggs
'00' flour
Breadcrumbs
Salt
Groundnut oil
POTATO STACK
4 medium potatoes
Parsley
20 g butter
Salt
I coat the fillets in flour, then eggs beaten with a fork, and finally breadcrumbs.

If egg remains after breading, I add breadcrumbs and make little balls rather than discard it.
IMG_1478.JPG
I fry fillets and balls in groundnut oil in a large pan until golden.

I drain on kitchen paper and only then add salt.
For the stack, I boil, peel and rice the potatoes into a pan with a knob of butter, salt, pepper and parsley, and let colour.

I press the potatoes into a food ring on the plate to form a stack, then add the perch. I also added artichoke hearts cooked with oil, garlic, salt, pepper and a little vegetable stock until tender.
