I combine flour and potato starch.

I add sugar.
20140601-002050-1250424.jpg
Then salt.
20140601-002121-1281191.jpg
Then vanillin.

Then sifted baking powder.

I put yoghurt in a jug.
20140601-002518-1518037.jpg
I add whole egg.
20140601-002555-1555683.jpg
I mix in oil.
20140601-002637-1597177.jpg
I wash, halve and stone cherries.
20140601-002803-1683495.jpg
I quickly mix yoghurt mixture into flour.
20140601-002921-1761600.jpg
I add half a glass milk.
20140601-003004-1804294.jpg
Then cherries.
20140601-003048-1848298.jpg
I mix very briefly: minimal mixing makes soft, not rubbery muffins.
20140601-003236-1956880.jpg
I divide between paper-lined muffin moulds.
20140601-003419-2059747.jpg
I bake at 180°C about 15/20 minutes until a knife in the centre comes out clean, then remove from tin and cool on a rack.
20140601-003640-2200836.jpg
Delicious and soft, dusted with icing sugar and served with preferably homemade cherry jam. Choose flavourful cherries for the best result.
