Ingredients and method

INGREDIENTS
200 g wholemeal flour
70 g brown sugar
80 g milk
2 small apples or one large apple
125 g plain yoghurt
A handful of sultanas
1 egg
1 sachet baking powder
1 pinch salt

I put the flour, sugar and sifted baking powder in a bowl.

A pinch of salt.

I soak the sultanas, choosing the amount to taste.
I squeeze and dry them with kitchen paper, then add to the dry ingredients so they do not sink during baking.

I mix well.

I peel the apples and cut into small cubes.

I add them and mix well.

I put the yoghurt and milk in a bowl.

I add the egg.

I whisk and pour over the apples.

I mix well until the apples are thoroughly coated.

I cut squares of baking parchment, put them in a muffin tin and divide the mixture between them.

I made 9 muffins.

I bake at 180°C for 15 minutes.

Soft and flavourful, with the distinctive taste of wholemeal flour, and not too sweet.
