INGREDIENTS FOR 2 OMELETTES
4 eggs
2 tablespoons grated Parmigiano
1 knob butter
1 teaspoon curry powder
Salt, pepper
FILLING
4 slices Gruyère or Fontina
4 slices Prague ham (smoked)

I crack eggs into a bowl and add Parmigiano and the teaspoon curry powder.

I add salt and pepper.

I whisk well.

Divide equally between two small bowls.

I melt butter in a non-stick pan and add one omelette's mixture.

Using a spatula, I let it set while rotating the pan, without flipping.

It should be nearly cooked but still moist; now I add cheese slices.

Then ham slices.

I roll with the spatula without tearing.

I seal, turn off and transfer to a plate under foil to keep warm and melt the cheese, then make the other omelette.

Serve with fresh salad or vegetables.

I garnished with a basil sauce.
