Classic Roman saltimbocca uses veal and prosciutto, but I prefer more flavourful pork loin and smoked pancetta. I flatten meat.

I put a double thin pancetta slice on each.

Then a large sage leaf.

I secure with a cocktail stick.

I melt butter with oil.

Once gently sizzling, I cook meat sage-side down a few minutes.

I turn and cook the other side.
20140714-162033-58833068.jpg
I add white wine.
20140714-162153-58913248.jpg
I evaporate, season with salt and pepper lightly and cook briefly.
20140714-162307-58987389.jpg
I reserve meat.
20140714-162411-59051442.jpg
I add butter and about a tablespoon flour to pan juices.
20140714-162544-59144948.jpg
I whisk out lumps, adding water if needed for a thick velvety sauce.
20140714-162706-59226384.jpg
I return saltimbocca and let flavours develop a few minutes.
