With Christmas approaching, this is an ideal dish: quick but impressive. The pancetta gives the salmon a surprising, distinctive flavour.
Excellent for busy celebrations: prepare everything ahead, then cook the salmon for 10 minutes and microwave the potatoes to reheat.
