A popular Asian dish in many versions with chicken, fish or bean sprouts, always soy sauce for flavour and saltiness. Mine is vegetarian, with plenty of vegetables as a complete meal; vary as you like.

Cook on high to keep vegetables crisp.
I wash and prepare vegetables, cutting carrot into pieces, slices and thin sticks.
I slice and wash leek.
I finely shred cabbage.
I cut courgette, removing watery, bland centre.
I cut peppers into strips.
Choose colourful vegetables for an attractive dish: we eat with our eyes too.
In a wok, I soften leek or onion briefly in oil, add carrots and cook on high for 5 minutes.
I add cabbage for 2/3 minutes.
Courgettes for 5 minutes, stirring over high heat.
I add peppers.
After 5 minutes, I lightly salt as soy sauce adds saltiness.
I boil water, turn off, add noodles, mix and leave covered for 4 minutes.
I drain and rinse cold.
I mix into vegetables with 4/5 tablespoons soy sauce.
Taste seasoning and add soy sauce if needed.
Serve hot, with chopsticks. Enjoy!
