No ice cream maker or equipment is needed for this very simple, refreshing "ice cream", described in the original as light. Just mix two ingredients, without added sugar, and personalise as you like. Very convenient to keep individually wrapped in the freezer. For more sweetness use vanilla yoghurt or add a tablespoon of honey or maple syrup. For younger children, the original suggests fruit yoghurt with little pieces of fresh or dried fruit and white chocolate, or plain versions.

Lolly made with just blueberry yoghurt, fresh blueberries and white chocolate.

Method

The preparation remains in its original order; guided mode is not available for this structure.

I combine the yoghurt and peanut butter in a bowl.

It should become a soft cream.

On a tray lined with baking parchment, I divide the mixture into circles, add an ice lolly stick to each, covering the tip to hold it in place, and smooth well.

I scatter finely chopped nuts and dried fruit over the whole surface and put the lollies in the freezer.

When frozen, I melt dark chocolate and decorate the lollies.

I put them back in the freezer.

When firm, I wrapped them individually.

The original says they keep for a long time in the freezer.
