INGREDIENTS FOR 2 PEOPLE
200 g fresh tagliatelle
1 sausage
2 courgettes
1 small leek
30 g butter
Soy sauce
1 teaspoon turmeric
Extra virgin olive oil
Grated Parmigiano
I wash the courgettes, remove their centres and cut into sticks.
I skin and crumble the sausage.
I slice and wash the leek.

I heat a little oil in a frying pan, add leek and courgettes and cook al dente, then deglaze with a splash of soy sauce.

I set aside and brown the sausage in the same pan, discarding released fat.

I add the courgettes and leek to the sausage.

In a little bowl, I combine butter and a teaspoon turmeric.

I mix well, form little knobs and refrigerate until needed.

I cook the tagliatelle, drain while still moist and toss in the sauce pan for a few minutes, adding the turmeric butter.

I add a handful of Parmigiano and cooking water if needed, toss quickly and serve.

No salt is needed because the sausage and soy sauce are already salty.
