Ingredients and method

The preparation remains in its original order; guided mode is not available for this structure.

Delicious as starters, perhaps one each, or mains with cheeses and cured meats.
INGREDIENTS FOR 4 STACKS
1 large round aubergine
2 vine tomatoes
100 g Scamorza dolce
8 sandwich bread slices
5 or 6 basil leaves
Grated Parmigiano
Salt and pepper
Extra virgin olive oil

Classic easy tomato peeling: cross-score the smooth ends of both tomatoes.
20140624-210258-75778123.jpg
I blanch two minutes in boiling water.
20140624-210545-75945952.jpg
I drain into cold water.

Skin loosens and removes easily.
20140624-211554-76554402.jpg
I cut into 4, deseed, cut strips then cubes.
20140624-211811-76691423.jpg
I dress cubes with oil, pepper, salt and basil and reserve.
20140624-214117-78077803.jpg
I peel, slice and dice aubergine.
20140624-214233-78153182.jpg
I cook in hot oil and season with salt and pepper.
20140624-214424-78264342.jpg
I dice Scamorza and reserve.
20140624-214519-78319681.jpg
I flatten bread with a rolling pin and cut 8 discs with a ring.
20140624-214759-78479422.jpg
I toast in the aubergine pan, having reserved aubergine in a bowl.
20140624-214925-78565540.jpg
I also crumble and toast bread scraps with oil rather than discard them.
20140624-215047-78647883.jpg
I place cooking rings on a parchment-lined tray, or make foil strips folded three times into rings, and put toast on the bottom.

Then aubergine.
20140624-215850-79130593.jpg
Then Scamorza.
20140624-220051-79251725.jpg
Then another toast, pressing.
20140624-220205-79325878.jpg
Then tomato and basil cubes.
20140624-220327-79407053.jpg
Then plenty of Parmigiano, oil, salt and pepper.
20140624-220441-79481638.jpg
I bake at 180°C for 15 minutes until gratinated, turn off and rest 5 minutes before removing rings. I gently plate with oil, toasted crumbs, basil and tomatoes.
